Looking for a fresh little cocktail that can go with just about any meal? Look no further than this little gem. I first encountered the ‘pineapple basil mojito’ concept in Vegas… this was before the whole craft cocktail boom where the weirder ingredients like burnt rosemary became a hit. I was skeptical of the basil addition, but love mojitos so I gave it a shot.
I was immediately hooked, and have returned for the drink every time I visit Vegas. So I figured, why not try it at home. So here is a simple version with a blackberry twist.
You will need:
2 ounces white rum
1 ounce pineapple chunks or juice
.75 ounce simple syrup or sweeter of choice
.5 ounce lime juice or a couple lime wedges
5 – 6 basil leaves (plus more for garnish)
In a cocktail shaker, muddle 4-5 basil leaves, pineapple chunks, blackberries and sweetner. Add in rum and lime juice (unless you muddled an actual lime). I prefer to pour a little bit of club soda over ice before adding the mixture, and then top it off again with club soda to mix it up.
Be sure not to shake the club soda unless you want it to explode everywhere haha.
Garnish with some blackberries and basil and maybe even pineapple chunks if you want. I always leave the artistic part up to the maker.
